It was interesting about five years ago I saw a group of Amish Women in Traditional Dress come down to Rouster's Orchard nearby and picked Blueberries by the Quarts..... I thought how wonderful the blueberry pies or jelly were going to be....We picked a couple gallons our selves ate some right away and made wonderful freeze packs and used them all winter....Jakob

This page will hold inspired Recipes from Amish Areas in Ohio, Indiana, and other areas.  However, this Recipe site will not be exclusively from Amish Country in Ohio.   There may be Other Areas with Down Home or Urban Cooking which we do not want to miss out on either.  

We can all agree to want the freshest ingredients and Best way of letting the Flavors Out.   Life for me is a wonderful trip and this site is dedicated to that Experience, and I would like to share that with my sister readers and their Families.

There are wonderful Recipes every where and as such we will post what we find that is tasty to some or all.

RED BEET EGGS



Hard boil eggs for 10 minutes -- no longer or the egg whites will become rubbery. Place in enough red beet juice to cover eggs, and soak for at least 2 days.

You can use the juice from either red beets purchased at the grocery store, or you can pickle your own red beets:

Red  Pickled Beets

  • 2 quarts diced or sliced beets, cooked
  • 3 small onions
  • 3 green peppers
  • 2 cups vinegar
  • 3 cups sugar
  • 3 tsp. salt
  • 1/2 cup grated horse-radish, optional

Dissolve sugar and salt in hot vinegar. Add horse-radish (if used) and bring to a boil. Add beets and chopped onion and simmer 20 minutes. Place in 2 sterilized quart jars or keep in the refrigerator.

POTATO FRITTERS


  • 1 cup mashed potatoes
  • 1 egg
  • 4 rounded Tbsp. flour
  • 1/2 tsp. baking powder
  • 1 tsp. salt
  • 1/4 cup milk
Mix all ingredients together in the above order and fry in skillet with melted shortening 1/4 inch deep. When brown around the edges and cakes are rather well set, turn and brown on the other side. Serves 4-6.
 Amish Raspberry Jam

5 c ground green tomatoes
4 c sugar
6 oz raspberry jello

Place ground tomatoes & sugar in large kettle. Bring to a rolling boil & boil 10 minutes, stir constantly. Turn off heat & add jello. Stir well until dissolved & put into hot sterilized jars & seal. Cold pack 10 minutes.
 Amish Corn Cob Jelly
12 red corn cobs
Pkg Sure Jell
3 c sugar
3 pt water

Boil cobs in water for 30 minutes. Remove from heat & strain. Add enough water to make 3 c. Add Sure Jell & bring to a boil. Add sugar & boil 2-3 minutes until it reaches jelly stage. Pour into hot sterilized jars & seal.

HASENPFEFFER


  • 8 or 10 slices of dressed rabbit
  • flour
  • 1/4 cup fat (such as bacon fat)
  • 1 tsp. salt
  • 1/4 tsp. pepper
  • 1/2 tsp. allspice or cloves
  • 2 medium-sized sliced onions, sliced
  • 2 heads garlic
  • 2 bay leaves
  • 1/2 cup vinegar
  • 1 can stewed tomatoes
  • 1 small can tomato puree
  • Fresh mushrooms, sliced, optional
Roll pieces of meat in flour and sprinkle with salt and pepper. Fry in fat until a golden brown. Place in a baking pan or casserole dish and add sliced onion, seasoning, vinegar, stewed tomatoes, and tomato puree (add mushrooms if desired). Let simmer or bake at 350 degrees for 1 to 1-1/2 hours. Serves 8-10.

Alternative Recipe

HASENPFEFFER STEW


Cook rabbit pieces in 1-2 cups of water in closed Dutch oven until meat can easily be deboned. Save broth to add to stew. Debone meat and chop into pieces. Fry meat pieces in fat (such as bacon fat) until golden brown. Drain pieces and add to other ingredients and broth(as listed above) in a crock pot. Cook for 4-5 hours.

POTATOES AND SMOKED SAUSAGE



Combine chopped onions, sliced potatoes, and slices of smoked sausage in a cooking pot . . . Add black pepper, minced parsley, and chopped garlic, if desired, to taste . . . Just barely cover with water . . . Bring to boil, and then cook on low heat until potatoes are soft.




Amish Cinnamon Apple Jelly or Any combination of Related Contents
1 qt apple juice ( this could be Grape or Other Suitable Juice )
1 box Sure Jell or Pectin Containing Product
4 ½ c sugar
2 T red hots candy
( Omit the Redhots if you don't want tne Cinnamon )

Mix together & cook on medium boil for 3 minutes. Place in hot sterile jars & seal.
